Bacon Cheddar & Tomato Sandwich

Cook bacon to desired doneness. Cut 8 thick bread slices and toast or grill until golden brown. Slice tomato into even slices and lightly season with salt. Spread one side of each bread slice with mayo. Layer your sandwiches from bottom to top with tomato, bacon, cheddar then lettuce.
Recipe Notes: Optionally try a different cheese than cheddar. Any aged cheese will work. Clothbound Cheddar or Alpine styles are our favorites.
