Crock Pot Roast

Slow Cook: 8½ - 9½ hours

Yield:  4–6

Ingredients:

  • 1 Chuck Roast (such as Kiernan Farm grass-fed)
  • 1 tsp extra virgin olive oil
  • 1 ½ cups vegetable juice (such as V-8)
  • 1 ½ tsp Worcestershire sauce (such as Lea and Perrins)
  • pinch of salt
  • pinch of pepper
  • 2-3 bay leaves, whole
  • 1 large onion, sliced ½ inch thick
  • 8oz – 10 oz of mushrooms, sliced ½ inch thick
  • ¼ cup water*
  • 2 Tbsp flour*

Instructions:

Season roast with salt and pepper on both sides.  Heat extra virgin olive oil in a hot pan.  Sear chuck roast in oil on both sides.  Place roast in crock pot and layer the next 7 ingredients in order listed.  Heat in crock pot 2 ½ hours on high and then 6-7 hours on low or until meat is fork tender.

*(optional) Mix water and flour, add to crock pot and stir. Use of flour and water is if a gravy consistency is desired.

Turn crock pot to warm until ready to serve.  Serve over mashed potatoes or egg noodles.

Extra virgin olive oil is available from Demi Olive Oil, salt and bay leaves from Spice Revolution, onions and potatoes from many of our farms, and mushroom are provided by Bulich Mushrooms.  Lastly, Trotta Foods has terrific pasta to compliment this dish.
